Recipe Ingredients for Cream of Broccoli Cheese Soup

6 cups broccoli
2 cups fat free half and half
3 cups fat free milk
1 cup colby jack cheese

Recipe Directions for Cream of Broccoli Cheese Soup

  1. Steam broccoli well, but not mushy (too much will steam out vitamins).

  2. Add broccoli to blender with some of the milk and blend until smooth. May need to do this in batches.

  3. Finely shred cheese.

  4. Combine creamed broccoli to large pot with rest of ingredients.

  5. Heat until cheese is melted into soup.

  6. Salt and pepper to taste.
