Recipe Ingredients for Cream of Asparagus Soup (Vegan)

340 g asparagus
1 large onion, sliced in large slices
2 cloves garlic
2 cups vegetable broth
1/4 cup unbleached flour
2 1/2 cups soy milk
2 tbsp soy sauce
2 tsp dried basil
1 salt and pepper

Recipe Directions for Cream of Asparagus Soup (Vegan)

  1. Chop the asparagus (if using frozen, steam or microwave it a little first), reserving the tips.

  2. Heat Olive Oil in large soup pot, add the onions and garlic. Saute until translucent but not browned.

  3. Sprinkle in the flour and stir a bit.

  4. Add the broth, asparagus and bring to a boil.

  5. Reduce to medium heat and cook until the asparagus is tender, about 15 minutes.

  6. Put contents of saucepan into blender.

  7. Process until smooth.

  8. Return the soup to the saucepan and add the asparagus tips, soy milk, soy sauce and basil.

  9. Cook over medium heat until the soup thickens and is heated through.

  10. Season to taste with salt and fresh cracked pepper and serve.
