Light and creamy soup that's great as a starter.

Recipe Ingredients for Cream of Asparagus Soup

1 T olive oil
1 lb asparagus, diced
1/2 medium onion, diced
1 clove garlic
10 oz vegetable broth
1 t flour
1 white pepper (to taste)
1 salt (to taste)
1 can (10 oz) cream of celery soup
1/2 cup skim milk

Recipe Directions for Cream of Asparagus Soup

Heat pot and add oil. Add diced asparagus and onions. When soft, add flour, garlic, salt and pepper. Cook for about a minute then add vegetable broth. Bring to a low simmer. Add cream of celery soup and milk. Simmer for about 10 minutes. Add to blender and blend until smooth.
