light low sodium version of an old favorite

Recipe Ingredients for "Cream" of Asparagus Soup

1 lb asparagus (fresh)
15 oz chicken broth
4 T flour
1/4 med onion
2 cups non-fat milk (liquid)
1 garlic powder to taste
1 black pepper to taste

Recipe Directions for "Cream" of Asparagus Soup

  1. Wash asparagus, remove tough ends, and cut into 1" pieces (approximately).

  2. Place into PAM'd out crockpot along with the onion that has been sliced.

  3. Cook on high heat about 1 hour and add chicken broth.

  4. Continue to cook for another 45 minutes.

  5. In a medium saucepan that has been sprayed out with butter-flavored PAM add 1/4 cup of flour. Whisk until flour is moistened on medium heat and whisk in milk.

  6. Continue to whisk until mixture comes to a simmer and cook for one minute. Set aside.

  7. Whiz asparagus and onion up in a blender along with enough cooking liquid to allow it to blend.

  8. Put asparagus mixture back into the crockpot along with the milk mixture.

  9. Season with garlic powder and fresh cracked black pepper.

  10. Serve in bowls and spray top of each serving with butter-flavored PAM to look like foam.
