An all inclusive Chili with all sorts of good stuff in it. Makes a GREAT leftover meal.

Recipe Ingredients for Crazy Veggie Chili

12 oz. Beef
15 oz. pork loin
15 oz. Pinto Beans
15 oz. Kidney Beans
15 oz. Butter Beans
14 1/2 oz. Stewed Tomatoes
14 1/2 oz. Diced Tomatoes
4 oz. Green Chilies
3 Carrots
3 Celery Stalks
1 large Green Bell Pepper
2 medium red bell peppers
1 medium onion
8 white mushrooms
5 garlic cloves
12 oz. Wheat beer

Recipe Directions for Crazy Veggie Chili

  1. Sear and cook the Beef in a skillet.

  2. Sear and cook the pork in the same skillet.

  3. Deglaze the skillet with water and pour leftover water over the meat in a bowl.

  4. Sautee Garlic, Onions, and peppers in the same skillet and deglaze with water reserving the left over in a large pot.

  5. Add beans, tomatoes, mushrooms, and green chilies in a very large pot. Let simmer for a short while.

  6. Add the meat and the sauteed veggies to the large pot and stir.

  7. Dice the carrots and celery and add to the pot.

  8. Add the wheat beer and stir.

  9. Add whatever spices you feel would be good. Chili powder, red pepper flakes, cumin, and cilantro, and flat leaf parsley are all very nice.

  10. Let the pot simmer for 45 min.
