Based on Paul Prudhomme's Crawfish Etouffee recipe, modified to have less fire and fat. Note that the calorie/nutrition information provided is incomplete; crawfish tails are not currently listed, but I have requested that they be added. When that happens, I'll update the recipe. Note that the servings are large dinner portions.

Recipe Ingredients for Crawfish & Shrimp Etouffee

2 teaspoons of salt
1/2 teaspoon of cayenne pepper
1/4 teaspoon of white pepper
1/4 teaspoon of black pepper
1 1/2 teaspoon of dried basil
3/4 teaspoon of dried thyme
3/8 cup olive oil
1 cup flour
3/4 cup celery, chopped
3/4 cup onion, chopped
3/4 cup bell pepper, any color, chopped
3 cups fish stock or fat free chicken broth
2 pounds crawfish tails, rated as shrimp as crawfish is not listed as food
1 pound medium shrimp, peeled
1 cup green onions, chopped for garnish
6 cups steamed rice

Recipe Directions for Crawfish & Shrimp Etouffee

  1. In a small bowl combine spices (first 6 ingredients), and set aside.

  2. In a heavy bottomed pot heat the oil until smoking hot, add the flour and whisk continually until the roux reaches a dark reddish brown color. This can take up to 5 minutes.

  3. Stir in celery, green bell pepper, and onion, and spice mix into the hot roux and remove from the heat. Stir until slightly cooled. Add the stock and bring to the simmer.

  4. Combine the crawfish, shrimp and sauce, and serve with steamed rice garnished with chopped green onions.
