Crawfish Jambalaya Recipe

Variation on old Nawlins dish, I serve mine with brown rice.

Recipe Ingredients for Crawfish Jambalaya

2 package (10 oz) yields Okra
1 large Onions
3 link (raw dimensions: 4" long x 7/8" dia), cooked Pork Sausage, Fresh, Cooked
6 cup Soup, stock, chicken, home-prepared
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 cup Peppers, Chili, Green, Canned
3 tsp Essence
10 oz Crayfish, Mixed Species, Farmed
1 cup Shrimp, Mixed Species, Canned
1 cup, diced Celery
1 tbsp Chili Powder
16 oz Diced Tomatoes
3 tsp Garlic

Recipe Directions for Crawfish Jambalaya

  1. In a large pot, simmer sausage in chicken stock, drain and slice at an angle for long slices. Return to the pot.

  2. Throw in onions, red peppers, celery, garlic, chili peppers and spices (1 tbsp each of Chili and Essence which is onion and garlic powder, paprika, thyme, oregano, black pepper, cayenne). Cook for about 10 minutes.

  3. Throw in okra and tomatoes and cook for another 8-10 minutes.

  4. Toss in crayfish and shrimp, cook for another 7 minutes and serve.
