An reasonably simple recipe but is not calorie friendly.

Recipe Ingredients for Crawfish Etouffee

8 ounces butter
1/2 cup flour
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1/2 cup celery, chopped
2 cloves of garlic, minced
1/2 cup tomato paste
1 tsp. salt
1 tsp. pepper
1 tsp. cayenne pepper
1/4 tsp thyme
2 cups fish stock
2 pounds crawfish tails
1 cup green onion, chopped

Recipe Directions for Crawfish Etouffee

  1. Make a roux with 4 oz. butter and the flour. Cook over low heat until flour is LIGHT brown or about 2 to 3 minutes. Keep heat and stir constantly to prevent scorching.

  2. Add the chopped vegetables and seasonings. Cook until vegetables are softened.

  3. Gradually stir in stock and let simmer 15 minutes or until thickened.

  4. Add crawfish, green onions, and remaining butter. Bring to a simmer.

  5. Simmer 4 to 5 minutes, cover, remove from heat, and let sit 15 minutes. Serve with rice.
