Recipe Ingredients for Crawfish Etouffee

1 stick butter
2 cups chopped onions
1 cup chopped celery
1/2 cup chopped green bell peppers
1 pound crawfish tail meat
2 teaspoons minced garlic
1/2 g bay leaf
1 tablespoon flour
1 cup water
1 teaspoon salt
1 pinch of cayenne
2 tablespoons finely chopped parsley
3 tablespoons chopped green onions

Recipe Directions for Crawfish Etouffee

  1. In a large saute pan over medium high heat, melt the butter.

  2. Add the onions, celery, and bell peppers and saute until the vegetables are wilted, about 10 to 12 minutes.

  3. Add the crawfish, garlic, and 2-4 bay leaves and reduce the heat to medium.

  4. Cook the crawfish for 10 to 12 minutes, stirring occasionally.

  5. Dissolve the flour in the water.

  6. Add the crawfish mixture.

  7. Season with salt and cayenne.

  8. Stir until the mixture thickens, about 4 minutes.

  9. Stir in the parsley and green onions and continue cooking for 2 minutes.

  10. Remove the bay leaves.

  11. Serve over steamed rice or dirty rice.
