Recipe Ingredients for Crawfish Etouffee

2 tbsp extra virgin olive oil
2 tbsp all-purpose flour
1/4 cup Smart Balance butter
2 onions, finely chopped
1 red bell pepper, seeded and finely chopped
2 cloves garlic, minced
1 tsp tomato paste
1/2 pound crawfish
2 jalapeņo peppers
4 tbsp fresh parsley

Recipe Directions for Crawfish Etouffee

  1. Whisk the oil with the flour in a small heavy saucepan. Cook over medium-low heat, stirring frequently, until the roux is dark golden brown, about 25 mins.

  2. Meanwhile, melt the butter in a heavy saucepan over low heat and add the onions, bell pepper and garlic. Cover and cook, stirring occasionally, for 25 minutes.

  3. Add the roux and tomato paste to the vegetable mixture. Stir in the remaining ingredients except the rice. Cook, covered, for 30 minutes. Let cool and refrigerate, covered, for 4 hours or overnight.

  4. Reheat the etouffee over low heat for about 30 minutes before serving over rice.
