Crawfish Etouffe Recipe

Crawfish in a roux cajun style (not creole) soup.

Recipe Ingredients for Crawfish etouffe

1 lb crawfish
1 med onion
1/2 green pepper
2 stalks celery
1/2 cup flour
1/4 cup vegetable oil
2 tbs butter
1 cup rice
1 cup diced tomato
2 cups chicken stock
1/4 tsp cayenne
1 tsp garlic
1 1/2 tsp salt
1 tsp black pepper
1/2 tsp thyme

Recipe Directions for Crawfish etouffe

  1. dice onion, green pepper and celery... (set aside)

  2. heat cast iron skillet or pot to med low heat.

  3. add to pot 1/4 cup vegetable oil let it heat up.

  4. to oil add your 1/2 cup flour and stir stir stir stir (you are making roux) stir constantly until rue is chocolate in colour. (about 20 mins adjusting heat to reach smoke point but not burning)!!

  5. when roux is ready add onion green pepper and celery.

  6. this stops it from burning.

  7. add butter (optional)

  8. cook down onion etc. for 5 mins

  9. gradually add to pot, chicken stock or shrimp stock 2 cups

  10. let simmer for 30 min.

  11. add garlic, salt and pepper, cayenne and thyme and diced tomato.

  12. let cook for 5 min

  13. add crawfish tails and let finish cooking for 15 mins.

  14. serve over hot rice
