Delicious, fluffy crusted pizza with whole grain flour and added fiber. (seriously, added fiber and you won't even know it's there! I promise!!!)

Recipe Ingredients for CrankyOleBroad's High Fiber Pizza

3/4 cup hot water
1 teaspoon sugar
2 1/8 teaspoons yeast
1/2 teaspoon salt
2 teaspoons sugar
1 cup spelt flour
1 cup all purpose flour
4 teaspoons Benefiber
1 tablespoon olive oil
2 cups mozzarella cheese
3 ounces bacon
1/2 cup pizza sauce

Recipe Directions for CrankyOleBroad's High Fiber Pizza

  1. Add 1 t. sugar to 3/4 cup very warm water

  2. Stir in 2 1/3 t. yeast

  3. Let sit until the foam reaches the 1 cup mark

  4. While the yeast is foaming up to 1 cup, mix all the dry ingredients together

  5. When the yeast is ready, stir in 1 T olive oil, add to dry ingredients.

  6. Mix by hand until all ingredients are wet, then knead for two minutes until dough is smooth.

  7. Better yet, use a heavy stand style kitchen mixer.

  8. Put the dough in a greased bowl, cover lightly, let rise 40 minutes in a warm place.

  9. Grease a pizza pan. I prefer a Lodge cast iron pizza pan.

  10. Spread the dough on the pizza pan, prick all over with a fork to let the air under the dough escape. Rise in a warm place another 40 minutes.

  11. At about the 30 minute mark, set the oven to heat to 510 and get your toppings ready.

  12. If their is air trapped under the dough, gently release it by lifting the edges.

  13. Add toppings

  14. Bake for 10 minutes, if not brown enough, add one minute at a time until the crust is done enough to suit you.

  15. Uncork the wine and enjoy!
