Recipe originally from Health notes. Modified by me. Very high in fiber and quite filling.

Recipe Ingredients for Cranky Day Minestrone

2 tbls canola oil
1 medium onion
1 medium green pepper
1 cup diced carrots
1 clove garlic, finely chopped
1 small zucchini, diced
1 cup green beans
1 cup green beans, snapped
1/4 head cabbage, diced
14 ounces black beans
28 ounces diced tomatos
32 ounces chicken broth
1 cup macaroni
2 cups water (if needed)
1 teaspoon basil
1 teaspoon marjoram

Recipe Directions for Cranky Day Minestrone

  1. Saute onions, garlic, green pepper, carrots and zucchini in oil until onions are translucent and veggies are brightly colored. Add basil and marjoram. stir for a minute or two to bring out flavor

  2. Add broth and tomatos, bring to a boil, than reduce heat and simmer for 45 mintues to an hour until veggies are tender. ( I love the I Italian seasoned diced tomatos).

  3. Add beans cabbage and pasta. Simmer about 10 to 15 more minutes or so until cabbage and pasta are done.

  4. I find the small shells pasta work the the best, but the recipe analyzer wouldn't recognize them.

  5. I used fresh veggies for all but the canned tomatos adn the beans. (though if you have time you can soak and cook your own beans ahead of time). If not black beans almost any kind of bean will work, save maybe garbonzo or lima

  6. If yoiu have other veggies around the kitchen you can probably toss them in also and adjust cooking time accordingly.

  7. If broth gets to thick, add more water or chicken stock until it is soup again, though this may affect calories.

  8. Since it is soup. feel free to experiment with different ingredients to your familiy's likeing.

  9. Can also replace chicken stock with veggie stock to make it completely vegan.
