Recipe Ingredients for Cranberry Yam Casserole Recipe

3 cups cranberries, picked over and washed
1 small orange, washed, sliced (peel included), seeds removed
1/4 cup orange juice
1/2 cup pecan halves
1 cups sugar
1 teaspoon cinnamon
1/4 teaspoon freshly ground nutmeg
1/8 teaspoon ground ginger
40 ounces yams (or sweet potatoes), drained

Recipe Directions for Cranberry Yam Casserole Recipe

  1. Preheat oven to 375 F.

  2. Place cranberries, sliced orange, Grand Marnier, pecans, sugar, cinnamon, nutmeg, and ginger in a large bowl. Toss gently to combine. Pour into a 2-quart casserole dish. Bake, uncovered, for 30 minutes.

  3. Remove from oven and stir in drained yams or sweet potatoes. Return to oven and bake an additional 15 minutes until heated through.
