Recipe Ingredients for Cranberry White Chocolate Oatmeal Cookies

3/4 cup whole wheat flour
3/4 cup unbleached white flour
1 t baking soda
1/4 cup butter
1/4 cup pancake syrup, reduced calorie
1/2 cup sugar, brown
1/2 cup sugar, granulated
1 large egg
1 1/2 t vanilla extract
1 1/2 cups oats, (quick or old fashioned rolled oats)
1 cup cranberries, dried (about 6 ounces)
1 cup white chocolate chips (about 4 ounces)

Recipe Directions for Cranberry White Chocolate Oatmeal Cookies

  1. Preheat oven to 350-degrees. Line two large baking sheets with parchment paper or lightly coat a nonstick baking sheet with canola cooking spray.

  2. Add whole wheat, white flour, and baking soda to a medium sized bowl and whisk to blend well. In large mixing bowl, beat the butter, pancake syrup and both sugars on medium speed until fluffy (about 2 minutes), scraping down the sides of the bowl after a minute. Add egg and vanilla and beat on high speed to combine. Scrape sides of bowl again.

  3. Add the flour mixture to the cookie dough and beat on low until combined. Gently add the oats, cranberries and white chocolate chips. Use a cookie scoop to form about 26 large sized cookies on prepared baking sheets or a tablespoon of dough to make 52 nugget-sized cookies.

  4. Bake until lightly brown, about 10 minutes for large cookies or 6 minutes for nugget size. Transfer cookies to wire cooling rack. Store cookies in a sealable bag or airtight container for several days.
