Recipe Ingredients for Cranberry Walnut Muffins

1/4 cup canola oil
2 cups whole wheat pastry flour
1/2 cup sugar
1 tablespoon egg whites
2 teaspoons baking powder
1/4 teaspoon fine sea salt
1 1/4 cup baking powder
1 1/4 cup unsweetened soy milk
1 teaspoon vanilla
1 cup dried cranberries
1/2 cup walnuts, chopped

Recipe Directions for Cranberry Walnut Muffins

  1. Preheat Oven to 375 degrees. Grease a standard sized muffin tin or use muffin liners.

  2. In a large bowl, combine the pastry flour, sugar, baking powder, salt and egg replacer.

  3. In a medium bowl whisk together soy milk, oil and vanilla.

  4. Add the milk mixture to the flour mixture, stirring until barely combined.

  5. Stir in dried fruit and nuts.

  6. Transfer the batter to prepared muffin tin, dividing it evenly.

  7. Bake 15-20 min or until toothpick intered into the center of the muffins comes out clean.
