Vegan cornbread with cranberries and walnuts

Recipe Ingredients for cranberry walnut cornbread

2 cups flour (spelt is suggested)
1 cup cornmeal
2 1/2 T baking powder
1 t salt
1/2 lb firm tofu, drained
1 3/4 cup water
3/4 cup maple syrup
1/2 cup olive oil
1 cup cranberries
1/2 cup chopped walnuts

Recipe Directions for cranberry walnut cornbread

Preheat oven to 350 degrees. Combine Dry ingredients in a large mixing bowl and whisk well. Add Wet ingredients to a blender and blend until creamy. Add wet to dry and mix well. Add cranberries and walnuts and mix well. Pour into 9x9 pan and bake until a toothpick comes out clean, approximately 45 minutes.
