Cranberry-Walnut Breakfast Recipe

These actually use yogurt. *Note to self: I have made these once, and frozen them for quick school breakfasts. I have not made the Irish Soda, Chocolate, or Healthy "cream" scones. Irish soda are the next to try.

Recipe Ingredients for Cranberry-Walnut Breakfast

1 c. fiber one
1 c. whole wheat pastry flour
1/3 c. wheat germ, toasted
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 c. butter
3/4 c. craisins
1/4 c. walnuts
2 tbsp. honey
2/3 c. yogurt
1 egg white
1 egg, beaten
2 tbsp. sugar
1/2 tsp. cinnamon

Recipe Directions for Cranberry-Walnut Breakfast

  1. Grind fiber one into crumbs (mini processor works best.) Pour into big chopper, add other dry ingred, as well as butter. Process until coarse crumbs form. Pour flour into wet ingredients, mixing minimally. Add craisins and walnuts, shape into round on floured surface, and cut into 8 triangles. brush with egg and sprinkle with cinnamon-sugar.

  2. Bake at 400*F 10-12 minutes. These freeze well. Defrost with 2 rounds of the toaster on 2.5 or 3 (turn halfway through).
