Recipe Ingredients for Cranberry Upside Down Cake

4 tablespoons unsalted butter
1/4 cups sugar
6 tablespoons brown sugar
12 ounces cranberries
4 tablespoons unsalted butter
1/2 cups brown sugar
2 tablespoons lemon zest
2 tablespoons orange zest
2 large eggs
1/2 c milk
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
6 ounces fresh cranberries
1/2 c chopped toasted pecans

Recipe Directions for Cranberry Upside Down Cake

  1. Line a 9 inch cake pan with parchment paper. Grease and flour.

  2. For the topping, mix butter and sugars in a bowl until creamy. Spread onto the bottom of the cake pan. Pour the cranberries on top and press in.

  3. Preheat oven to 350 degrees.

  4. To make the cake, place butter, sugar, and zests in the bowl of a mixer with a paddle, mix until light and fluffy. Add eggs one at a time, scraping down the bowl after each addition. Add milk and vanilla ? the batter will look broken and messy, but that?s OK. Add flour, baking powder, and salt and mix until just combined. By hand, fold in remaining cranberries and pecans. Spread batter gently over cranberries in the cake pan. Transfer to oven and bake until center springs back with a gentle push and sides are bubbling and gooey, about 45 to 55 minutes. Allow to rest 15 minutes. Run a knife around the edge, then place a platter or dinner plate face down over the cake and invert. Remove the pan straight up. Allow to come to room temperature and serve. Makes 8.
