Recipe Ingredients for Cranberry Sweet Potato Quick Bread

2 1/2 cups whole wheat flour
1 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup sweet potato
3/4 cup eggs
1/3 cup orange juice
1/4 cup butter
1 cup cranberries
2 tablespoons sliced almonds

Recipe Directions for Cranberry Sweet Potato Quick Bread

  1. Preheat oven to 350 F.

  2. Combine first 7 ingredients in a large bowl. Make a well in center of mixture.

  3. Combine sweet potato, eggs, orange juice, and melted butter in a bowl. Add to dry ingredients. Stir just until moist. Fold in cranberries.

  4. Spoon batter into a loaf pan coated with cooking spray. Sprinkle almonds over batter. Bake for 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean. Let cool in pan 20 minutes. Remove from pan. Cool completely on wire rack.
