Recipe Ingredients for Cranberry stuffed Poblano Peppers

6 Poblano peppers
1 pound lean ground beef
2 cups wild rice
1 cup sharp cheddar cheese, grated
1 cup cranberries

Recipe Directions for Cranberry stuffed Poblano Peppers

  1. Turn oven on to 425 - wash Poblano peppers slice open so they will lie flat on lightly sprayed cookie sheet, and roast for 15 minutes. Set peppers aside to cool.

  2. Brown beef in skillet, then set aside.

  3. Prepare rice according to directions.

  4. Mix the beef, rice, and cranberries together. Add 3/4 cup of cheese to mixture.

  5. Spoon mixture into peppers; top with remaining cheese.

  6. Bake at 375, for 40 minutes.
