A low-cal option for cranberry relish. I took the recipe from the cranberries bag and made it lighter. I found some canned mandarin orages sweetened with Splenda to make the cals even lower. The Splenda changes the consistency of this relish, so it takes a long time (a day?) to thicken. Might go faster if you reduce the amount of water you use...

Recipe Ingredients for Cranberry Relish

4 cups (380g) cranberries , fresh whole
1/4 cup (50 g) granulated sugar
12 packets (12.0 g) splenda
1 cup (244.0 g) mandarin oranges, unsweetened and drained

Recipe Directions for Cranberry Relish

  1. bring sugar, splenda, and water to a boil over medium heat.

  2. add cranberries and bring to a boil again, stirring occasionally.

  3. When cranberries have popped, take off heat.

  4. Cut up mandarin oranges and add to cranberry mix.

  5. Allow to cool at room temperature.

  6. Chill in refrigerator until ready to serve.
