Delicious scones made from scratch. This is a sweeter, lighter texture than scones from the bakery. You can substitute half whole-wheat flour, and add any spices that appeal to you!

Recipe Ingredients for Cranberry-Raspberry Scones

3 cups white flour
1/2 cup sugar
1 tsp salt
3 tsp baking powder
1/2 cup butter, cut in with pastry cutter
3/4 cup water, or fruit juice
3/4 cup milk, low fat
1/2 cup cranberries, whole
1/4 cup raspberries

Recipe Directions for Cranberry-Raspberry Scones

  1. Mix flour, sugar, salt, baking powder together.

  2. If desired for taste, finely grate peel from one small orange into dry mixture, or use orange extract.

  3. Cut in butter using a pastry cutter.

  4. Add liquids, mix into sticky dough. T

  5. urn out onto a floured board, knead until dough is not sticky.

  6. Press dough out into long oblong shape.

  7. Spread fruit (frozen raspberries work best) onto half. Fold other half of dough on top of fruit, press down edges and mold dough into rounder shape.

  8. Put on baking sheet (I use a baking stone so i don't have to grease it), slice like a pizza into 12 slices.

  9. Pull them apart a little so each scone will have room to rise.

  10. Bake at 375 degrees for 20-30 minutes, or until golden brown.
