Recipe Ingredients for Cranberry Pumpkin Cake

2/3 cup sugar
1 cup brown sugar
2/3 cup butter
4 eggs
2 cups pumpkin, canned
2/3 cup water
2 1/2 cups flour
1 cup whole wheat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg, ground
1/2 tsp cloves, ground
1 1/2 cups cranberries, dried

Recipe Directions for Cranberry Pumpkin Cake

  1. Combine wet ingredients in large bowl

  2. Whisk together dry ingredients in another

  3. Add dry to wet 1/3 at a time and beat with spatula until smooth. Repeat

  4. Add cranberries and mix. Coat large bundt cake pan with shortening and dust with flour. Pour batter in prepared pan.

  5. Bake in preheated 325 degree oven for 90 minutes. Rest 10 minutes in pan then turn out onto cooling rack.
