Recipe Ingredients for Cranberry-Pumpkin Bread with flaxseed

1/2 cup whole wheat flour
1/2 cup flour
1/2 cup flaxseed, ground
2/3 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup egg whites
1 cup pumpkin puree
1/4 cup canola oil
1/2 cup unsweetened applesauce
1/4 cup apple juice
1/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 cup dried cranberries

Recipe Directions for Cranberry-Pumpkin Bread with flaxseed

  1. Preheat oven to 350 degrees, and lightly coat an 8x4-inch loaf pan with canola oil spray.

  2. In a large bowl combine dry ingredients.

  3. In a medium bowl combine the remaining ingredients.

  4. Add wet ingredients to dry mixture. Combine, but do not overmix.

  5. Pour batter into prepared pan and bake for 50-60 minutes, until wooden toothpick comes out clean. Let rest for 10 minutes, then remove bread and continue to cool.
