Slow Cooker Recipe - Meat and Potatoes

Recipe Ingredients for Cranberry Pork Roast

4 medium potatoes, peeled and cut into 1" chunks
3 lbs. pork loin roast, rolled & tied
16 oz cranberry sauce, whole berry
5 1/2 oz. apricot nectar
1 small onion, chopped
1/2 cup dried apricots, coarsley chopped
1/2 cup splenda
1 tsp. dry mustard
1/4 tsp. crushed red pepper

Recipe Directions for Cranberry Pork Roast

  1. Place potatoes in a 3 1/2 quart or larger slow cooker and place the roast over the potatoes

  2. In a large bowl, combine the remaining ingredients; mix well and pour over the roast

  3. Cover and cook on the high setting for 5 to 6 hours

  4. Remove the roast to a cutting board and thinly slice. Seerve with potatoes and sauce.
