Based on recipe in Epicurious. Substituted chicken broth for Glace de Volaille Gold, and olive oil for butter.

Recipe Ingredients for Cranberry Pecan Cous Cous

2 tablespoons olive oil
1 medium onion, finely chopped
1/2 cup celery, finely chopped
1 1/2 cups dried whole wheat couscous
3 chicken bouillon cubes, disolved in 2 cups water
1/2 cup orange juice
1/2 cup dried cranberries
1/2 cup chopped pecans, toasted
1 Grated orange peel (zest of 1 orange)
2 tablespoons flat leaf parsley
1 dash salt, to taste
1 dash ground pepper, to taste

Recipe Directions for Cranberry Pecan Cous Cous

Saute vegetables in olive oil until translucent. Add cous cous, broth, juice, and cranberries. Bring to boil then simmer on low for approximately 5 minutes until fork fluffy. Add toasted pecans, zest, parsley, and salt and pepper to taste. Fluff and serve warm. [As an after thought, I juiced the orange that was used for zest, and added that with the pecans, which added a bit more flavor.]
