Biscotti. Delicious with tea or coffee, or you can dip them into melted chocolate if you want chocolate-covered biscotti. Note: In addition to the listed ingredients, this recipe also uses the zest of one lemon (or orange).

Recipe Ingredients for Cranberry Pecan Biscotti

1.5 cup, halves Pecans
1 Teaspoon Baking Powder
2.5 cup Gold Medal Whole Wheat Flour
1.25 cup Sugars, Granulated
0.13 tsp Salt
3 large Egg, Whole
2 large Egg, Yolk
1 tsp Vanilla Extract
1 cup Dried Cranberries

Recipe Directions for Cranberry Pecan Biscotti

  1. Preheat oven to 350F.

  2. Toast nuts for 5-8 minutes (optional).

  3. Mix baking powder, flour, sugar, and salt.

  4. In another bowl beat egg yolks, eggs, and vanilla. Add to dry ingredients and stir until sticky dough is formed.

  5. Stir in nuts, cranberries, and zest.

  6. On a well-floured board, knead dough and shape into two 9" x 3" logs.

  7. Grease baking sheets and bake 25-30 minutes or until golden brown.

  8. Remove from oven and allow to cool enough to handle.

  9. Reduce oven to 275F, because we'll be returning the biscotti to the oven soon.

  10. On cutting board, cut logs into diagonals 1/2 inch thick.

  11. Return pieces to baking sheet, laying pieces flat.

  12. Bake 20 minutes, flip them, and bake another 20 minutes.

  13. Cool on wire rack.
