Fluffy with a hint of sweetness from the cranberries. No need to add sugar!!!

Recipe Ingredients for Cranberry Pancakes

1 cup flour
1 egg
1/2 cup milk
1/2 cup dried cranberries
2 tbsp sunflower oil
1 tsp baking powder

Recipe Directions for Cranberry Pancakes

  1. Sieve the flour and baking powder into a bowl.

  2. In a seperate bowl mix together the milk, egg and oil.

  3. Pour the egg and milk mixture into the the flour and whisk until incorporated and a smooth mixture.

  4. Heat a frying pan over medium heat, add a tbsp of sunflower oil.

  5. using an ice cream scoop, scoop mixture into the pan and leave until the top of the pancakes starts to bubble.

  6. Flip over the pancake and cook until golden brown on both sides.
