makes approximately 12 patties **For a traditional breakfast sausage flavor rubbed sage, thyme, and rosemary work well in place of the cranberries and orange zest.

Recipe Ingredients for Cranberry-Orange Sausage Patties

1 lb ground turkey
1/3 cup orange juice
1/2 tbsp brown sugar, maple syrup or honey
2 cloves minced garlic
1/2 tsp Kosher salt
1/2 tsp red pepper flakes
1/2 tsp thyme
1 tsp fennel seed, crushed
1/4 tsp pepper
2 tbsp minced dried cranberries
1 Orange (2 g) zest (tsp)

Recipe Directions for Cranberry-Orange Sausage Patties

  1. Crush fennel and salt with mortar and pestle or in a spice grinder. Combine with pepper flakes, thyme and pepper. Set aside.

  2. In a large bowl, combine ground pork, orange juice, sweetener, garlic, cranberries and orange zest. Mix in spices. Using a 1/4 cup of mixture, form into patties. I used an old hamburger press to form nice even patties. A great trick if you are forming them completely by hand is to make a small indent with your thumb and forefinger in the center of each patty to help them cook more evenly.

  3. To cook immediately: once patties are formed, place in the fridge for an hour before cooking. This makes them firmer and much easier to cook. Fry gently in pan or on skillet. Eat now, or freeze individually, or assemble into sandwiches.

  4. To freeze as patties: Line a cookie sheet with waxed paper. Place patties on a cookie sheet in a single layer in freezer until frozen solid. Use scissors to cut waxed paper, place each one in a large freezer bag or plastic container.
