A hearty, unbelievably tender treat I adapted for my own use. You can substitute apples (for which I add nutmeg, ground cloves and cinnamon) or any other fruit you'd care to use.

Recipe Ingredients for Cranberry Orange Oat Scones

1 3/4 cups flour
1/3 cup Splenda
1/4 tsp salt
3/4 tsp baking soda
1 tsp baking powder
1/2 cup light margarine
3/4 cup rolled oats
1/3 cup dried cranberries
1/2 tsp dried orange peel
2/3 cup buttermilk

Recipe Directions for Cranberry Orange Oat Scones

  1. Preheat oven to 375 degrees F (190 degrees C) and place rack in center of oven.

  2. Line a large baking sheet with aluminum foil and grease lightly with non-fat cooking spray (butter flavored spray adds a nice flavor). I spray a moderate amount in the center and use a piece of plastic wrap to spread the oil around.

  3. In a large mixing bowl place the flour, Splenda, salt, baking soda, baking powder and orange peel then whisk gently to combine.

  4. Add the margarine and using the whisk like a pastry blender, cut the margarine into the dry ingredients to create a uniformly crumbly mixture.

  5. Add the cranberries and rolled oats, then using a mixing spoon, mix until combined.

  6. Stir in the buttermilk (adding more if necessary) and mix just until the dough comes together.

  7. Place the dough on a floured surface and knead it 4 or 5 times.

  8. Place the dough on the greased baking sheet and press it out into a circular shape about 7 inches wide and 1 1/2 inches thick.

  9. Cut the dough into 16 slices (I use a pizza cutter dipped in flour), leaving it in its circular shape with the pieces just touching.

  10. Bake for 16 to 18 minutes. It should be lightly browned and a toothpick inserted in the center of a slice comes out clean.

  11. Cool until it can be handled and serve.
