This is a good breakfast and makes good leftover snacks.

Recipe Ingredients for Cranberry - Orange Oat Pancakes

1 cup Rolled Oats (Old Fashioned)
1 cup Whole Wheat Flour
1/4 cup All-Purpose Flour
3 tbl Packed Brown Sugar
4 tsp Baking Powder
1 tsp Ground Cinnamon
1/4 tsp Salt
2 large Eggs
1 cup Orange Juice
1/4 cup Skim Milk
1/4 cup Extra Virgin Olive Oil
3/4 cup Dried Cranberries

Recipe Directions for Cranberry - Orange Oat Pancakes

  1. Preheat nonstick griddle.

  2. Whisk together oats, flours, sugar, baking powder, cinnamon, and salt in large bowl. In medium bowl, whisk together eggs, orange juice, milk and oil.

  3. Add wet ingredientsto dry ingredients and stir to combine. Fold in cranberries.

  4. Drop 1/4 Cup batter onto griddle and cook until edges look dry.

  5. Two (2) pancakes are a serving. This should make (16) pancakes.
