Healthy, whole grain treat for either breakfast or a snack

Recipe Ingredients for Cranberry orange nut whole grain flax muffins

3/4 cup all purpose flour
3/4 cup whole wheat flour
1/2 cup flaxmeal
1/3 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup dried cranberries
1/2 cup chopped walnuts
1 tablespoon orange zest
1 cup buttermilk
1/4 cup orange juice
1 egg
1 tsp vanilla extract

Recipe Directions for Cranberry orange nut whole grain flax muffins

  1. Preheat oven to 350degrees and line a twelve cup muffin tin with papers. (due to the lack of fat in the recipe I highly recommend the papers or using a silicone muffin tin greased with vegetable oil. A silicone pastry brush will allow you to do this with about a teaspoon of oil. Also, let the muffins cool completely if using the silicone before trying to remove them.

  2. Mix all dry ingredients in a large bowl

  3. In a 2 cup liquid measuring cup add buttermilk,juice,egg and vanilla. Beat til well mixed.

  4. Add wet ingredients to dry. stir until just combined.

  5. Fill cups with mixture.

  6. Bake 18-25 minutes.

  7. Let cool completely before removing from pans.
