Recipe Ingredients for Cranberry Orange Muffins

1 1/4 cups All Bran
1 1/3 cups plain yogurt, low fat (0.1% MF)
1 egg, lightly beaten
1/2 cup orange juice
1/2 cup liquid honey
1/4 cup Becel light margarine
1 tbsp orange rind, grated
1 cup All purpose flour
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup cranberries

Recipe Directions for Cranberry Orange Muffins

  1. 1.Preheat oven to 375F (190C). Spray muffin tins with non-stick cooking spray.

  2. 2.Combine cereal and yogurt in mixing bowl; let stand 5 minutes. Stir in egg, orange juice, honey, melted margarine and orange rind. Mix well.

  3. 3.In a large bowl, combine all-purpose flour, whole wheat flour, baking powder, baking soda and salt. Stir cereal mixture and cranberries into dry mixture until just combined.

  4. 4.Fill greased muffin cups with batter. Bake 25 minutes or until set and golden. Cool on rack. Store in airtight container or freeze.
