A low-fat cranberry and orange muffin recipe. Perfect for breakfast or snacking.

Recipe Ingredients for Cranberry Orange Muffins

1 cup dried cranberries
1/4 cup orange juice
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup applesauce
1 teaspoon orange zest
1/2 cup splenda
1 egg
1 egg white
1/2 cup skim milk
1 teaspoon orange extract

Recipe Directions for Cranberry Orange Muffins

  1. Preheat oven to 375 degrees.

  2. In a saucepan, put the cranberries and orange juice. Bring to a simmer and remove from heat. Allow berries to plump and cool.

  3. Prepare muffin tin according to your own preference.

  4. In a bowl, combine the baking powder, salt, and flour. Set aside.

  5. In another bowl, mix together the applesauce, orange zest, splenda, and orange extract. Add the egg and egg white, stirring well after each addition.

  6. To the applesauce mixture, add the flour mixture and skim milk alternately.

  7. Fold in the cranberries.

  8. Spoon the batter into the muffin tins and bake for 25 five minutes, or until muffin tops are golden brown.

  9. Allow muffins to cool. Serve and enjoy.
