A great way to use left-over cranberry sauce after the holidays.

Recipe Ingredients for Cranberry Orange Muffins

3/4 cup wheat bran
1 cup whole wheat flour
1/2 cup sugar
1 1/2 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 cup cranberry sauce
1 egg
1/2 cup yogurt
1/4 cup canola oil
1 teaspoon orange rind

Recipe Directions for Cranberry Orange Muffins

  1. Combine first 6 ingredients. Mix well.

  2. Mix together rest of ingredients in separate bowl.

  3. Add wet ingredients to dry. Stir just until combined - don't over mix.

  4. Fill muffin cups about 3/4 full.

  5. Bake at 400F for 25 minutes.
