from Recipezaar, but I substituted applesauce for oil

Recipe Ingredients for Cranberry Oatmeal Muffins

1 cup rolled oats
1 cup low-fat sour cream or yogurt
1/2 cup applesauce
1/4 cup white sugar
1/2 cup brown sugar
1 egg
1 cup flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons grated orange rind
3/4 cup chopped cranberries

Recipe Directions for Cranberry Oatmeal Muffins

  1. Preheat oven to 400 degrees F.

  2. Soak oats in yogurt or sourcream just enough to make it moist.

  3. Sift dry ingredients into a bowl.

  4. In a separate bowl, add applesauce (or vegetable oil, if preferred), sugars, and egg.

  5. Beat until well blended.

  6. Gradually fold in dry ingredients.

  7. Add chopped cranberries.

  8. Put in greased muffin tins.

  9. Bake for 20 minutes.
