High in fiber and low in fat, this bread is a snack that will keep you feeling full for hours. Good cold, but better if warmed or toasted.

Recipe Ingredients for Cranberry Nut Bread

2 cups flour
1/2 cup Egg Beaters
1/2 cup flaxseed meal
1/2 cup almonds, ground
1/2 cup walnuts, chopped
1 cup cranberries, fresh, chopped
1/2 tsp salt
2/3 cups Splenda
1 cup water
1 tsp baking powder

Recipe Directions for Cranberry Nut Bread

  1. Grind almonds to a fine meal in blender. Combine almond meal, flour, flaxseed meal, baking powder, and salt and mix well.

  2. Chop cranberries in blender, combine with walnuts, and set aside.

  3. Add water, Egg Beaters, and Splenda to flour mixture in a large mixing bowl, and mix on low with an electric mixer until blended. Fold in cranberries and nuts.

  4. Pour into a loaf pan that has been sprayed with PAM, and lightly floured.

  5. Bake at 350 degree for 1 hour, or until knife inserted in center comes out clean.

  6. Cool on wire rack.
