Healthful, tasty and moist breakfast quick bread loaded with fiber and goodness.

Recipe Ingredients for Cranberry Nut Bread w/ Flaxseeds / eatingwell

1 1/2 c cranberries, fresh (or frozen)
2 oranges
1/3 c Flaxseeds
1 c whole wheat flour
1 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg
3/4 c sugar
2 T canola oil
2 T buttermilk
1 tsp vanilla
1/2 c walnuts, chopped

Recipe Directions for Cranberry Nut Bread w/ Flaxseeds / eatingwell

  1. Preheat oven to 350F. Coat three 6 x 3" mini loaf pans (or one regular size loaf pan) with cooking spray.

  2. Pulse cranberries in blender or food processor till coarsley chopped. Grate orange zest to measure 2 tablespoons. Squeeze oranges to measure 3/4 C juice (add prepared OJ if necessary to make 3/4 C).

  3. Grind flaxseeds into course meal in clean, dry coffee grinder or blender. Transfer to large bowl. Add flours, baking powder, baking soda & salt; whisk to blend.

  4. Whisk egg, sugar, oil, buttermilk, vanilla, orange zest & juice in medium bowl. Add to flour mixture and mix with rubber spatula just till dry ingredients are moistened. Fold in cranberries and 1/4 C of the nuts. Scrape batter into prepared pan(s), spreading evenly. Sprinkle loaves with remaining 1/4 C nuts. Place loaves on baking sheet.

  5. Bake loaves until tops are golden & cake tester inserted in center comes out clean - 35 to 45 minutes for mini loaf pans, 40 to 50 minutes for full size pan. Cool in pans on wire rack for 10 minutes. Loosen edges and turn loaves onto rack to cool before slicing or wrapping.
