Sweet, tart, and nutty vegan delights

Recipe Ingredients for Cranberry Muffins

1 c all purpose flour
3/4 c barley flour
1/4 c buckwheat flour
3/4 cup raw sugar
2 oz Blue Agave
4 tsp baking powder
1/8 tsp salt
1/2 c hazelnuts
1/2 c almonds
2 c fresh cranberries
1 banana
1/6 c coconut oil
1/6 c peanut oil
2/3 c orange juice
1/4 cup water
3 tbsp ground flaxseeds

Recipe Directions for Cranberry Muffins

  1. Combine dry ingredients.

  2. Mix water and flax in blender until frothy. Add other liquid ingredients.

  3. Combine, being careful not to overmix.

  4. Bake for 20 minutes at 375.
