Recipe Ingredients for Cranberry Muffins

3 cups ground almonds
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1 1/2 cups fresh cranberries
1/2 teaspoon vanilla extract
1/2 cup honey
3 eggs

Recipe Directions for Cranberry Muffins

  1. Preheat oven to 160 degrees Celcius or 325 degrees F

  2. Combine the almonds, baking soda, baking powder, salt and cinnamon in a bowl.

  3. Combine the cranberries, vanilla, honey and eggs in another bowl.

  4. Add the dry ingredients to the wet and mix well.

  5. Evenly fill each baking cup with the batter (fill to top of cup, as muffins only rise a bit).

  6. Bake for 18 to 20 minutes.
