I add a bit of grated orange rind and a tblsp or two of o.j. Brush muffins with melted margarine and sprinkle w raw sugar as soon as you take out of the oven.

Recipe Ingredients for cranberry muffins

2 c whole wheat flour
1/2 c brown sugar
4 tsp baking powder
1/2 tsp salt
2 eggs
1/4 c canola oil
1/2 c skim milk
1 c Ocean Spray whole cranberry sauce

Recipe Directions for cranberry muffins

  1. Mix first 4 ingredients together.

  2. Beat eggs then add next 3 ingredients.

  3. Next add liquid to dry

  4. Using an ice cream scoop fill muffin liners 3/4 full

  5. bake @ 400 for 17 min in our oven - 20-25 min is what the recipe calls for.
