Recipe Ingredients for Cranberry muffins

1 c flour
1 c whole wheat flour
2/3 c sugar
1 1/2 c cranberries
1/4 c applesauce
1/4 c flax meal
1 egg
1 c skim milk
1 tbs orange zest
1 tsp vanilla extract

Recipe Directions for Cranberry muffins

  1. Chop cranberries

  2. mix dry ingredients and cranberries

  3. whisk together egg, milk, zest, applesauce and vanilla

  4. make a well in the dry ingredients and add the liquid

  5. Mix just until liquid is fully incorporated (don't overmix)

  6. bake at 400F for 20 minutes
