Variation of a Shedd's Spread Country Crock Classic Muffin Recipe.

Recipe Ingredients for Cranberry Muffins

3 cups flour
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
2 large eggs
1 cup skim milk
1/2 cup canola oil
1 tsp vanilla extract
3/4 cup cranberries, chopped

Recipe Directions for Cranberry Muffins

  1. Combine dry ingredients in a large bowl. Set aside.

  2. Combine wet ingredients in a large mixing cup. Whisk until blended.

  3. Add wet ingredients to dry ingredients. Add cranberries. Stir just until mixed.

  4. Spoon into 18 greased muffin cups.

  5. Bake at 400 degrees for 20 minutes or until golden brown.
