Recipe Ingredients for Cranberry muffins

2 cups flour, all purpose
1 tbsp baking powder
1/4 tsp salt
1 egg
2/3 cup white sugar
1/4 cup vegetable oil
1 cup milk
1 tsp cinnamon
1/3 cup craisins

Recipe Directions for Cranberry muffins

  1. Mix first 3 ingredients in bowl

  2. Beat sugar, oil, egg & milk together in separate bowl

  3. Combine flour mixture with egg mixture

  4. stir in cranberries

  5. scoop batter into 12 greased muffin cups.

  6. Bake at 400F for 20 to 25 minutes.

  7. Note 1: can replace cranberries with blueberries

  8. Note 2: can mix 1/4 brown sugar & 1 tsp of cinnamon and sprinkle over muffins before baking for a Streusel Muffin plus a few extra calories.
