Butter can be replaced by vegetable oil.

Recipe Ingredients for Cranberry muffins

1 1/2 cup whole wheat flour
1 cup oatmeal
1/2 cup brown sugar
15 ml baking powder
1/4 tsp salt
1 cup (milk)
1/4 cup butter
1 cup cranberries
1 tbsp lemon zest
1/4 cup walnuts
1/4 cup chocolate chips
1 egg

Recipe Directions for Cranberry muffins

  1. Preheat oven 200 celsius (400 F).

  2. Mix dry ingredients and coarsly chopped cranberries and chocolate.

  3. Mix egg with milk and oil/butter.

  4. Gently mix the liquid and dry fractions. Do not overmix!

  5. Pour in muffin papers in muffin pan!

  6. Let 18-20 in the oven, or until brown.
