Cranberry Muffin - from Living the GI Diet book

Recipe Ingredients for Cranberry Muffin

1 cup wheat bran
1/2 cup all bran cereal
1 cup skim milk
1 cup dried cranberries
1 egg
1/4 cup canola oil
1 1/4 cups whole wheat flour
1/4 t salt
1/3 cup splenda
1 1/4 t baking soda
1 t ground cinnamon
1/2 cup boiling water

Recipe Directions for Cranberry Muffin

  1. Combine wheat bran, cereal and sal in a bowl and add boiling water.

  2. Stir in milk and cranberries.

  3. In another bowl wish splenda, egg and oil. Stir into bran mixture.

  4. Preheat oven to 375.

  5. In another bowl, mix flour, baking soda and cinnamon. Pour in the bran mixture and stir just to combine.

  6. Put in lined or greased muffin tins.

  7. Bake about 20 minutes.
