Cranberry Granola Recipe

Makes 18 servings



A serving size is 1/2 cup. For the 1 cup each of wheat, rye and barley, I used a total of 3 cups of Trader Joe's Country Choice organic multi-grain hot cereal. I used Bob's Red Mill unsweetened large flaked coconut.

Recipe Ingredients for Cranberry Granola

3 cups rolled oats
1 cup wheat, whole grain
1 cup rye, whole grain
1 cup barley, whole grain
1 cup unsweetened coconut, flaked
2/3 cup slivered almonds
2/3 cup sliced almonds
2/3 cup sunflower seeds, roasted, unsalted
1 tablespoon sesame seeds
6 tablespoons honey
6 tablespoons vegetable oil
3/4 cup cranberries, dried, unsweetened

Recipe Directions for Cranberry Granola

  1. Preheat oven to 300 degrees.

  2. In a 11x14 glass dish, combine all dry ingredients, except cranberries.

  3. Combine honey and oil in small bowl. Mix well. Sir into oat mixture.

  4. Bake at 300 degrees for 10 minutes, then stir. Repeat this at least three more times or until lightly toasted. Remove from oven.

  5. Mix in the cranberries and cool the mixture on a wire rack for about an hour.

  6. Store in an airtight container.
