Cranberry and Granola Muffins (Very Low Fat) Recipe

A spicy and sweet muffin with a few cranberries and topped with a sprinkling of granola with only 1 gram of fat. Makes 12 huge muffins; could probably make 18 smaller muffins.

Recipe Ingredients for Cranberry and Granola Muffins (very low fat)

4 tbsp fat free half and half
2 large egg whites
3/4 cup plain nonfat yogurt
1/4 cup low fat sour cream
1 tbsp baking powder
2 cups self-rising flour
1/3 cup water
1/4 cup dried unsweetened cranberries
1 scoop (1/2 tbsp) stevia powder
1 tbsp molasses
2 tbsp granola
2 tsp cinnamon
1 tsp allspice

Recipe Directions for Cranberry and Granola Muffins (very low fat)

  1. Preheat oven to 350 F.

  2. Spray muffin tins with no calorie spray oil lightly.

  3. Beat egg whites.

  4. Add yogurt, half and half, and sour cream.

  5. Slowly add flour in 1/2 cup increments, stirring gently.

  6. Add baking powder. Mixture will be almost bread-dough like.

  7. Slowly add water; you may not need all of it. This is to give it a more "normal" muffin mix consistency. You don't want it watery.

  8. Add stevia powder and molasses, stir.

  9. Add cinnamon and allspice.

  10. Slowly mix in cranberries.

  11. Pour in muffin tine to 2/3 full.

  12. Lightly sprinkle granola on top.

  13. Bake for 15 or until know comes clean when poked into muffin.

  14. *You can also use sugar, sun crystals, or more molasses, I just made my own stevia powder and wanted to use it.*
