Recipe Ingredients for Cranberry-Eggnog Cookies

1 cup butter, softened
1 1/2 cups sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2 eggs
1 teaspoon rum extract
3 1/4 cups all-purpose flour
1 1/2 cups jam
4 teaspoons cornstarch

Recipe Directions for Cranberry-Eggnog Cookies

  1. beat butter 30 seconds

  2. add sugar, baking powder, salt, and nutmeg. beat until combined

  3. beat in eggs and rum until combined

  4. beat in flour

  5. divide dough in half and chill for 1 hour or until firm

  6. heat in a saucpan jam and cornstarch until thick and bubbly

  7. roll out dough and spread jam

  8. roll up dough and chill for 4 hours

  9. preheat oven to 375

  10. slce cookies and bake 10-12 minutes or until edges are firm and bottoms are light brown.
